Vegetable Beef Ramen Chili Soup

I enjoy cooking. Preparation and cleanup, not so much. For a while now, I’ve wanted to share this quick and delicious original recipe with clients, fans, and friends but due to the many inherent dangers and opinions involved in both cooking and eating, I’ve hesitated. As much as I don’t like feeling the need to use them, I am truly thankful for disclaimers.

Earl Chinnici’s Vegetable Beef Ramen Chili Soup

Ingredients:

  • 15 OZ can of Mixed Vegetables (drained & rinsed)
  • 10.5 OZ can of Vegetable Beef Condensed Soup
  • 15.5 OZ can of Chili Beans
  • 3 OZ package of Beef Flavor Ramen Noodle Soup
  • Approximately 6 cups of water (2 cups to cook noodles plus about 4 cups for consistency and to help harvest the spices stuck to the side of the can of chili beans—15.5 OZ times 2 equals 3.875 cups)

Directions:

  • Carefully beat unopened package of soup with sturdy ice cream scoop or similar device until noodles are evenly crushed but not entirely pulverized.
  • Bring 2 cups of water to a boil in a large stainless steel pot.
  • Add crushed noodles (but not seasoning packet) to water and boil 3 minutes stirring often.
  • Add the vegetable beef soup, mixed vegetables, chili beans, additional water, and contents of the seasoning packet that comes with the noodles.
  • Return to a boil, stirring often to avoid burning and thoroughly mix ingredients.
  • Remove from heat.
  • Cover and allow 5 to 10 minutes for good measure.
  • Enjoy.
